It’s still dark outside and my hands are already black with grease. I feel a bead of sweat make its way down my spine and I wipe my brow with the back of my hand. “It’s always something,” I mutter to myself at least fifty times a day.

Light a fire and let it burn down to a good coal bed. Place a rack over top and preheat your cast iron skillet. Add some high-smoke point oil to the skillet and place a pot of salted water over the fire to boil.
